17-11-2024The knife arrived in an oversized clear plastic sleeve, which is not really great for storage exactly...so, that detail I need to work out. But that is not really a knife critique. This knife came out of the package sharp as a razor. The handle is textured, and I think that it allows for a secure grip even with wet or slippery hands. The handle may be a bit short, but that is a nitpick thing that I do not think is of any real concern. The blade is thin, and I used it twice immediately to see how well it cut: First, to cut cooked strip steaks for presentation (I wanted to see how well this thing sliced). Like a hot knife through butter (no pun really intended, but it is an opportunistic metaphor). Second, to open a two-bone rib roast vacuum bag, and slice the rib roast into two (gigantic) steaks. The plastic bags I use for vacuum packing/freezing are pretty thick, and while not really that difficult to cut open, if your knife is not optimum sharp, you need to have a little bit of tension on the bag to get it to cut. With this knife, I had no issues. I had decided to butcher the rib roast (by cutting it in half) anyway, and this thin blade was the perfect tool. Two perfect steaks, and I could tell that this was a definite purpose slicing blade...I could tell that this was a thin blade design, and really sharp. I purchased this to cut brisket. I am smoking a brisket today, and I fully expect perfect slices with this knife. This brand came highly recommended, and I think that I agree. Hoping that the edge stays sharp... I am looking at a butcher essentials set from Victorinox, as well...might as well get some real tools that are right for the job.

Im a knife snob who carries pocket knives that cost around the same as a nice smart phone, so Im kinda particular about blade steel, handle material, construction, etc... I bought this knife as a birthday gift for a friend who recently started smoking/bbqn large cuts of meat. I chose it based solely on the brand, and the reviews, instead of price and apearance. Cause lets face the facts, its a very basic design, its not a super steel, and a fairly low price tag compared to other knives in this category. Turns out those reviews were right! This thing is sharp, stiff with a lil bit of flex, tons of grip on the handle on greasy situations, cleans up quick, its dishwasher safe (if thats your thing), all around great knife. Im honestly thinking of replacing my current brisket knife, which was almost triple the price. On another note, I purchased the 8 chefs knife from this collection as well, also a heck of a bargain and would recommend both knives to anyone looking for quality kitchen cutlery.

> 3 dayWe purchased this for Thanksgiving this year to cut the turkey and it was wildly successful. The blade makes it incredibly easy to cut through large slices of meat, and keep Is it the same width throughout the whole slice. Its also very easy to clean although it is large so storage can be tough depending on your drawer space. Overall I would recommend!

> 3 dayI love this knife so much that I bought one for my best friend for Christmas this year. Being so long, its great for chopping nuts because it fits all the way across the nuts as they expand during chopping. Great for melons and large squashes. Cutting fudge, brownies, cakes, etc. is easy. My only complaint is that the knifes handle grip is slightly taller than the knife blade, so the handle hits the cutting surface and suspends the handle end of the knife blade a tiny bit above the cutting surface. The blade should be a little deeper than the handle, not vice-versa. But the blade length is special and very, very useful. It more than offsets the small flaw in the handle height.

The edge is superb and has thus far been simple to maintain; a few passes through a fixed, double edged, ceramic sharpener and 8 or 10 strokes on a steel and the edge is actually sharper than when I removed it from the box! This knife makes it very simple to slice brisket, steaks of any cut, tri-tips, roast beef, ham or turkey. You must have one for your kitchen.
