Global 7 Vegetable Knife

> 3 dayWe have owned this knife for 4 years and purchased it as a Christmas gift last year. We cannot say enough positive about the quality of Global knives. They are fantastic and the blade has remained sharp. We had it professionally sharpened once but it may not have even needed it. Excellent all around kitchen knife and the great start to any collection.

> 3 dayive been using this knife for about a decade now pretty much exclusively. its light and handles well and can do most anything i ask of it. blade have never required professional sharpening despite constant use (i go over it a few times with a ceramic steel when i use it). no rusting or staining to speak of. ive used lots of different knives, from ginsu to high end german and this one is the answer for me. i expect to use this knife daily till i die

> 3 dayLike all Global knives, the 7 inch vegetable knife is razor sharp and seems to hold its edge. I would get the shorter version of Global’s vegetable knife rather than the 7 inch version as the larger knife can feel heavy and less maneuverable.

> 3 dayThis is a fantastic knife, excellent quality, extremely sharp. Holds its edge for a long time and sharpens well. I have fairly small hands and it feels great, the weight is well distributed and it makes for highly efficient chopping. Made a wonderful gift.

> 3 dayI work in a banquet kitchen that produces high class cuisine on a very large scale. When it comes to chefs knives, I work alongside every brand of knife imaginable. I see a lot of Shuns, Henkels, Ken Onions, Globals, and one guy even sports his James Beard limited edition chefs knife. But the funny thing is, when it comes to an alternate knife for more precise cuts where perfection is mandatory, this is the knife in everyones kit. I always have to be careful where I lay my knife so that no one confuses it as theirs, but it just goes to show you how great of a knife this is. The shape of the knife allows you to line up the food for a perfectly straight cut that is made simple with the thin design and ultra sharp, low maintenance blade. It definitely shouldnt be the first knife for your collection as its not the best choice for the variety of tasks commonly associated with a chefs knife, but it sure makes a remarkable addition to any set.

Greater than one weekThis knife excels at slicing and dicing vegetables. Since I learned to cook, I had always used an 8-10 french chefs knife for this task, then about a year ago, my spouse bought a Global G-46 Santoku knife. It quickly became my go to knife for vegetables. I wanted a Global knife to keep in another kitchen and purchased this knife, based largely upon D. E. Hardys Amazon review. I like this knife better than the Santoku for slicing and dicing; its ergonomics seem better, and I prefer the flatter angle of the handle relative to the blade. I also use Globals MinoSharp Ceramic Wheel Water Sharpener and keep one at each kitchen.

> 3 dayExcellent knife. Very sharp out of the box. Great quality, the shape is just right for scooping up chopped up vegetables after cutting.
