> 24 hourI own 3 Global knives -- the G-58 6 cooks (chefs) knife, the GS-3 5 Cooks (utility) knife, and this knife, the G-5 7 Vegetable (nakiri) knife. All 3 are great knives, have great balance, and are extremely sharp. I found, testing with yams and carrots, that with the G-5 its like slicing thru butter. The wonderfully balanced G-58 is a close second, and the lighter weight GS-3 comes in 3rd, but still ahead of all other knives in my kitchen save one. These are great knives. Worth the price, (which fluctuates daily).

It is a wonderful vegetable slicer, having a relatively straight blade and has that wonderfully wide blade that acts as a spatula when transferring recently chopped food to someplace else. Sharp, well balanced, and probably my second favorite Global Knife (the G-2 chefs knife coming in first)

> 24 hourIm a knife guy who has maybe 35 sharp and ready at any time (Henckels, Macs, Mundials, Dexter-Russells, Wusthofs). This Global vegetable knife is absolutely my go-to for everything vegetable. Not as versatile as a chefs knife, wont replace a slicing, paring, bread, or fillet knife, but it simply has no equal for clean, straight cuts in vegetables. I have large hands, and the Global vegetable knife feels great (even though the handle is smaller than many other handles). Ive never had a problem with slipping. Its a big knife but light and incredibly easy to control. As a knife guy, I have lots of sharpening options and experience. I have used the Fiskars and Minosharp rolling sharpeners on my Global and Mac knives almost exclusively for over 10 years, with great success. So easy to use that my Global is just sharp all the time. Great team.
