It is a wonderful vegetable slicer, having a relatively straight blade and has that wonderfully wide blade that acts as a spatula when transferring recently chopped food to someplace else. Sharp, well balanced, and probably my second favorite Global Knife (the G-2 chefs knife coming in first)

Greater than one weekGift for my son who chops a lot of raw veggies & fruits. He raved about this knife (I did do my research). It comes very highly recommended. Extremely sharp!

16-11-2024Beautiful well balanced knife. I have expensive German Wustoff knives that I love, this is my first Japanese knife and it is really impressive. Fits perfect in my hand, weight is perfect and it is extremely sharp. Excellent product.

> 3 dayWe have 3 other Santoku style knives in addition to another 4 european style chefs knives, and this is what we use most - except bones or other really hard stuff of course (I chipped the blade of a carbon steel santoku on a brussel sprout stalk) Razor sharp, we use a diamond steel to keep it that way.

> 3 dayI have had all of the favorite kitchen knives over the years, old German carbon steal, new German stainless, and even a few rather nice Japanese Nakiri knives of the same price as the Global. Really, I feel like my life in the kitchen has been wasted all of those years since I brought this knife into my life. It is the only knife I use now. Its ergonomics allow for the finest garlic to boning out a chicken, and everything in between. It makes prepping feel like sculpting, and never a chore just to get food on the table after a long day at work. The edge keeps beautifully, the balance and weight is perfect, and tall blade almost gives it a cleaver feel. Thank God my kids are finishing college and I can give them all of my old knives, and my home kitchen can simply have the best.....

> 3 dayThis is the only knife you will ever need! Vegetables and herbs almost dice themselves! I could not be happier with my knife. I highly recommend this product. But be careful, it is extremely sharp!

> 3 dayThe Design of this knife is HORRIBLE! Not all people are as careful as they want to and we know what we will get (painful cut!). This brand is not taking peoples security into consideration. The corner close to the handle is general really sharp and some items even have a curve that is making it worse. I am really unsatisfied that the sharpness of this brands collection is good enough while you may get a few stitches on your skin easily.
